About us
Winery Paul Clauss is located at Domäne Weil, a former royal estate with a long history of agricultural use. Situated on over 50 hectares in a landscape conservation area, we cultivate 10 hectares of vines at Domäne Weil, complemented by an additional 4 hectares in the nearby wine regions of Esslingen and Untertürkheim (Stuttgart).
Since 2019, we have embraced organic cultivation, reflecting our dedication to sustainable and environmentally friendly practices. As a family-run winery with a deep-rooted tradition of viticulture, the estate is now led by Paul Clauss, the 14th generation. Paul’s vision is to harmonize time-honored family traditions with innovative digital cultivation methods, ensuring the production of premium-quality, sustainable wines.
This balance of heritage and innovation allows Winery Paul Clauss to craft wines that not only reflect the unique character of our vineyards but also our passion for sustainability and quality.

Products & Services
We produce organic still wine and organic sparkling wine. Our winery is located in the state of Baden-Württemberg, near Stuttgart. Our main grape variety is Riesling. We also grow Pinot Noir, Muscat Trollinger and some local grape varieties.
White wine R dry
Ein klassischer Riesling, der durch seine Klarheit und Frische besticht. In der Nase entfalten sich ausgeprägte Aromen von grünem Apfel, spritziger Zitrone und reifem Pfirsich. Am Gaumen zeigt er sich herrlich leicht und unbeschwert, getragen von einer vitalen Säurestruktur, die dem Wein Trinkfluss und eine feine Eleganz verleiht.
Muskattrollinger Rosé
Dieser Rosé besticht durch sein charakteristisches, feinwürziges Muskat-Aroma. In der Nase entfaltet sich die typische Würze, die dem Wein eine besondere Ausdruckskraft verleiht. Am Gaumen präsentiert er sich schlank und unbeschwert. Das feine Spiel zwischen dezenter Restsüße und der animierenden Art macht ihn zu einem sehr ausgewogenen Erlebnis – der ideale Begleiter für gesellige Stunden an lauen Sommerabenden.
Riesling Brut sparkling wine
Ein lebendiger Sekt, der durch seine klare Riesling-Frucht von grünem Apfel, Zitrusfrüchten und reifem Pfirsich besticht. Subtile Hefenoten verleihen ihm Komplexität und Tiefe, während die rassige Säure ein erfrischendes Rückgrat bildet. Die dezente Dosierung im Abgang balanciert den lebhaften Charakter perfekt aus und macht ihn zu einem eleganten, handwerklich anspruchsvollen deutschen Sekt.
Muskat-Trollinger sparkling wine
Dieser Sekt besticht durch sein einzigartiges Muskat-Aroma und seinen lebendigen Charakter. Als trockener Sekt ausgebaut, präsentiert er sich mit einer charmanten, moderaten Restsüße, die ihm eine herrliche Fülle und einen weichen Schmelz verleiht. Das Ergebnis ist ein spritziges, wunderbar fruchtbetontes Erlebnis mit feiner Perlage und einem aromatischen Nachhall – ein eleganter Begleiter für jeden besonderen Moment.
White wine R offdry
This delicately tart Riesling scores with a charming bouquet of floral accents and the aromas of fully ripe apples. It is wonderfully balanced on the palate: the subtle residual sweetness perfectly buffers the Riesling acidity and gives the wine a round, smooth body with a high drinkability.
White wine R Spontaneously fermented | dry
This dry, spontaneously fermented Riesling captivates with its authentic profile. The nose reveals delicate floral notes and finely nuanced fruit aromas. On the palate, it impresses with a powerful body and lively depth that leads to a long, elegant finish – a wine with character.
